海风不是一种原料。
品鉴艾莱岛、奥克尼与斯凯岛的威士忌时，我们常会捕捉到海盐、 湿礁石与潮湿海藻般的咸润印象。人们很自然地认为，海风穿过仓库， 把盐分带进了酒桶。
真相更为复杂：海风无法直接溶解进橡木桶中的酒液。杯中的海洋气息， 是地貌、原料、熟成环境与人类感官共同编织出的风味幻象。
海岸感不是大海进入了酒，而是风味让我们想起了大海。
Sea breeze is not an ingredient.
Whiskies from Islay, Orkney and Skye often suggest sea salt, damp rock and wet seaweed. It is tempting to imagine ocean air passing through warehouses and carrying salt into the cask.
The reality is more nuanced. Sea breeze cannot dissolve directly into spirit inside oak. Maritime character is an impression woven from terrain, raw materials, maturation and human perception.
The sea does not enter the whisky; flavour reminds us of the sea.

橡木桶并非完全密闭，酒液会通过木材孔隙与空气缓慢交换， 也就是熟成中的“呼吸作用”。但悬浮在空气中的海盐晶体颗粒较大， 很难穿透木板，几乎无法直接渗进桶内原酒。
因此，单纯吹海风并不能给威士忌带来咸味。滨海风味主要沿着两条线索形成： 泥煤麦芽携带的原生风味，以及海岸微气候造成的熟成差异。
Oak casks are not perfectly airtight. Spirit exchanges slowly with ambient air through the wood, often described as the cask breathing during maturation. Airborne salt crystals, however, are too large to cross the staves.
Exposure to sea wind alone cannot create saline whisky. Coastal character follows two more credible paths: flavour carried by peated malt and maturation shaped by the coastal microclimate.
海岛泥煤：风味的底层骨架
Island peat: the flavour backbone
艾莱岛等沿海岛屿的泥煤形成于海岸湿地，地层中混合海藻、 海洋植物残骸与贝壳沉积物。泥煤燃烧时，这些长期封存的物质化为烟气， 浸润用于酿酒的麦芽。
这种烟熏不只有焦味。潮湿海藻的咸鲜、湿地腐殖质与微妙矿物感会附着于麦芽， 最终进入新酒。大众口中的“海风风味”，很大一部分正是海岛泥煤形成的味觉投影。
Peat on islands such as Islay forms in coastal wetlands rich in seaweed, marine plant remnants and shell sediments. When burned, this long-buried organic matter becomes smoke that permeates the malt.
The result is more than char: damp seaweed, wetland humus and subtle minerality travel with the smoke into new make spirit. Much of what drinkers call sea breeze is the sensory projection of island peat.

Coastal microclimate reshapes maturation
即使使用同一款麦芽，在内陆山谷与临海仓库熟成，最终酒感也会不同。 海风虽送不来海盐，却会改变环境湿度和温差，间接影响酒液与橡木的交换速度。
Even with identical malt, maturation in an inland valley and beside the shore can produce different textures. Sea wind brings no salt into the cask, but it changes humidity and temperature, indirectly altering the exchange between spirit and oak.

Lower evaporation
High humidity can reduce evaporation and slow extraction, yielding gentler tannins.

Bright vanilla and fruit sweetness may feel quieter, allowing mineral and damp impressions to emerge.

联想造就“海风幻觉”
The sea-breeze illusion
风味不只由客观化学物质组成，也包含品鉴者的心理联想。 当我们预先知道一支酒来自艾莱岛海岸，大脑便会建立关于大海的期待。 泥煤的海藻气息与熟成带来的清冷矿物感彼此叠加，形成强烈的海风印象。
盲饮时，不少人很难区分海岛威士忌与重泥煤内陆威士忌； 一旦产区被告知，“海岸气息”却会迅速变得清晰。
Flavour is not only objective chemistry; it also contains the taster's associations. Knowing a whisky comes from Islay's coast creates an expectation of the ocean. Seaweed-like peat and cool minerality then reinforce that expectation.
In blind tasting, many drinkers struggle to separate island whisky from heavily peated inland spirit. Reveal the origin, and the coastal note often seems immediately obvious.
